Mexican spiced chicken, salad, rice, homemade guacamole, fresh tomato salsa and soured cream

Beat away those January blues (apparently a lot of people have them) by bringing a bit of Mexican spice to your healthy food. That’s what I did earlier this week and I couldn’t have been more pleased with the results.

I grilled some chicken breasts which had marinated in coriander, cumin, lime juice and cayenne pepper (careful with this, it can really hit you in the back of the throat when you’re cooking), with a fresh tomato salsa, guacamole, salad and some rice.

Simple tomato salsa
Sliced baby plum tomatoes
Half a diced red onion
Finely diced red chilli
A handful of freshly chopped coriander
A dash of sherry vinegar
A splash of olive oil
Freshly ground black pepper
Squeeze of lime juice

Combine all of the ingredients and plate up.
